Cheese Fondue

The ingredients

For 4 people

  • 400 g of PDO Comté Fruité (matured 8 to 12 months)
  • 400 g fo PDO Comté (matured for at least 24 months)
  • a clove of garlic
  • 2 to 3 glasses of dry white wine
  • a glass of kirschwasser brandy
  • a spoon of cornflour
  • pepper.
  • salt

The preparation

  1. Cut the bread into pieces just before your guests arrive so it hardens.
  2. Mix the cornflour into a small glass of kirschwasser brandy Cut the cheese into strips.
  3. Rub the inside of the fondue pot with the clove of garlic.
  4. Heat the white wine. When it starts bubbling, you can flambé the wine to reduce the alcohol content. Put the cheese into the white wine piece by piece, and stir it in making a figure of 8.
  5. Add the kirschwasser brandy/cornflour mix, a pinch of salt and pepper.
  6. Season to taste.
  7. Light the portable stove base and put the fondue pot onto it. Stir occasionally with a wooden spoon.
  8. Enjoy!
