François Perret, representing the Table de l’Espadon at the Ritz Paris is the latest Best Restaurant Pastry Chef in the world. In 2019, he was awarded this prize by the association Les Grandes Tables du Monde, to follow on from Christelle Brua.
And did you know that this great pastry chef started his studies right here in Bourg-en-Bresse ?
He still takes inspiration from Bresse’s tradition for indulgence !
I have PDO ‘faisselle’ cheese, butter and cream delivered twice a week. As any native of Bresse, I use lots of cream!
I have always loved cooking for others. In Bresse, culinary art and conviviality are paramount. I try to represent these traditions in the desserts I concoct for the customers in this Parisian palace. My ‘Tarte Bressane’ is a good example of that.
